Leave this off to convert the whole document. Commas separate single pages, a hyphen makes a run: “1-3, 8, 12-” means pages one to three, page eight, and page twelve to the end.
The Resolution setting above is a multiplier of the PDF’s own size, which is 72 DPI — so Print (3x) is 216 DPI. Print shops usually ask for 300. Turning this on replaces the multiplier. Higher numbers grow the file quickly: 600 DPI holds four times the pixels of 300.
Decides how large each JPG is. 92% is close to visually lossless; below about 60% you start to see blocking around text and edges. PNG is lossless and ignores this setting.
